RULES of the VPN Association

We receive many requests for membership and also for information regarding the rules of the association. Which pizzerias can become members? Immediately below, you will find the basic requirements for membership and  under "Obligations of the VPN Association" and "Obligations of the Members" you will find a translation from Italian into English of a portion of the VPN Disciplinary.

Basic Requirements

1. A wood-burning oven: The pizza must be cooked by wood. Gas, coal or electric ovens, while they may produce delicious pizza, do not conform to the tradition.

2. Proper ingredients: 00 flour, San Marzano (plum) tomatoes, all natural fior-di-latte or bufala mozzarella, fresh basil, salt and yeast. Only fresh, all-natural, non-processed ingredients are acceptable.

3. Proper technique: Hand-worked or low speed mixed dough, proper work surface (usually a marble slab), oven temp (800° F), pizza preparation, etc.

4. Review by the designated representative of the association assuring that the ingredients, technique and final product conform to the tradition.

5. Each individual restaurant is bound to uphold the standards of the association. Moreover, each individual restaurant is bound to pay a membership and membership renewal fee. Hence, membership fees do not apply to any new units opened subsequent to joining VPN, nor is membership transferable from one location to another. Rather, each individual location is evaluated and billed separately. In the event of non-compliance by one or more of my restaurants, the VPN association maintains the right to suspend or rescind membership on an individual or collective basis.

Obligations of the VPN Association

1. The association concerns itself with: promoting and publicizing the Verace Pizza Napoletana trademark and its requirements with shows, conferences and fairs and all that which can be useful to the reaching of the goals of the association;

2. Assuring the adherence to the discipline by the associates and the training of the same associates;

3. Giving technical assistance in order to facilitate adherence to the discipline;

4. Selecting the businesses whose tools, materials and products correspond to the requirements of the discipline;

5. Organizing information sessions for the responsible parties of the associated businesses;

6. Organizing and promoting training for pizza-makers;

7. Informing the associates regarding the work and initiatives undertaken by the association.

Obligations of the Associates

1. The associates concern themselves with: displaying in an evident way the trademark of the association in the inside and where possible on the outside of their business and exclusively in said location;

2 Inserting in their menu the types of pizza promoted by the discipline, preparing them and serving them adhering strictly to the rules of the discipline of V. P. N. including the productive process and ingredients.

3. The responsible party of the agency must know Verace Pizza Napoletana and its ingredients.

4. The pizza-maker must be recognized by the association V.P.N. and in the case of substitution of the recognized pizza-maker, the business is obligated to communicate it immediately to the association. (for example, via fax or e-mail).

5. The association accepts membership by the said associated business in other associations provided they are not in conflict with the goals and the rules of the association.

6. The associates are obligated to communicate and agree with the association whatever promotional or publicity activity; participation in fairs, training courses, creation of regional and national competitions and all that which regards pizza and that involves directly or indirectly the association itself.
