The two courses vary only in the length of time not the content. The longer course is for those who feel they need more than three days to master the technique.

Our training is conducted in the US in Marina del Rey, CA (Los Angeles). Most of our trainees are chefs or amateur cooks, however, no prior culinary experienced is required.

Course costs do not include transportation or lodging. There is a Courtyard Marriot across the street from the restaurant where the training is held and where many trainees stay.

Our training is hands-on and practical as opposed to theoretical. There is no formal classroom instruction. Rather, you will be in a working restaurant making the cheese, the dough, and caring for the wood-burning oven. You will learn all aspects of the production of Authentic Neapolitan Pizza™ including the ingredients, all required equipment, techniques, and protocols.

There is no schedule of classes. Rather, training is arranged on an ongoing and ad hoc basis. Thus, you would first tell us by e-mail which dates interest you. Remember that 3 day training runs Wednesday through Friday and one week training from Monday through Saturday.

If the dates you request are available, you would next send us a $300 deposit check for each trainee (maximum two persons) by mail to the address below. Alternately, you can pay by PayPal or credit card. We will direct you to an electronic payment page for the deposit when your training dates are approved. There is a $10 transaction fee for online payment. In the case of a check, we will hold the requested dates for one week while the check is in transit. Once we receive the check, you are booked for training for the dates you requested and we approved. The remainder of the training fee is due upon completion of the training.
